Herbed Crab Sandwiches 1 lb lump crabmeat
2 tbsp low fat mayonnaise, plus 2 teaspoons
2 tsp fresh parsley, minced
2 tsp fresh tarragon, minced
1 tbsp scallions, plus 1 tsp., minced
1/4 lb low fat cream cheese
2 eggs, beaten
3/4 tsp Dijon mustard
4 English muffins, split and toasted
4 slices tomato
Combine the crab, mayonnaise, parsley, tarragon, and scallions in a medium
bowl. In a separate bowl, beat together the cream cheese, eggs, and
mustard. Spread the crab mixture over the English muffins. Spread the
cream cheese mixture on top, and broil the muffins 6 inches from the heat
source for 3 minutes. Add the tomato slices and broil again for 2 more
minutes.
Per serving: calories 386, fat 13.1g, 31% calories from fat, cholesterol
233mg, protein 34.4g, carbohydrates 29.8g, fiber 2.0g, sodium 927mg.
