Orzo With Spinach And Feta Cheese 1 cup orzo pasta
1 1/4 tsp olive oil
3/4 medium onion, minced
7 oz frozen chopped spinach, thawed and well drained
2 tbsp feta cheese, plus 2 tsp.,crumbled
freshly ground black pepper, to taste
Cook the orzo according to package directions. Drain. Heat the oil in a
skillet over medium high heat. Add the onion and saut‚ for 5 minutes. Add
the spinach and saut‚ for 4 more minutes. Toss the onion spinach mixture
with the hot orzo. Add the feta cheese and ground pepper and toss well.
Serve immediately.
