Pork Chops Niçoise 2 tsp olive oil
4 3 ounce lean pork chops
2 3/4 large tomatoes, chopped
2 cloves garlic, minced
3/4 large green bell pepper, chopped
3/4 tsp dried basil
1/3 cup black olives
1 1/3 cups cooked rice, hot
In a large skillet, heat oil over medium heat. Add pork chops and lightly
brown on both sides. Add the tomatoes, garlic, pepper and basil; cover.
Simmer 25-30 minutes, turning pork chops once. Add the olives and continue
to simmer over low heat 7-10 minutes. Arrange rice on a serving platter,
place pork chops over rice, spoon sauce over the top and serve.

67mg, protein 26.0g, carbohydrates 36.3g, fiber 5.1g, sodium 182mg.
