German Fruitcake Recipe

German Fruitcake
3/4 cup butter or margarine
2 cup sugar
4 Eggs
3 cup flour
1/2 tsp allspice
1/2 tsp cinnamon
1/2 tsp nutmeg
1 cup buttermilk
3/4 tsp soda
2/3 cup cherry preserves
2/3 cup apricot preserves
2/3 cup pineapple preserves
1 cup chopped pecans
1 tsp vanilla


Cream butter, sugar and eggs until light.

Sift flour, allspice, cinnamon and nutmeg together.

Add soda to buttermilk.

Add dry ingredients and buttermilk alternately to creamed mixture, mixing
after each addition.

Fold in preserves, pecans and vanilla.

Bake in 2 greased and floured 9x5x3 inch loaf pans or 1 large tube pan at
325 degrees 1 1/2 hours.

Cool in pan 15 minutes before removing cakes.
