Linda W. German Potato Salad Recipe

Linda W. German Potato Salad
5 lb Red potatoes, cooked with
Skins on
5 Stalks celery, chopped
1 large Onion, chopped
3/4 lb Bacon, cut in pieces
3/4 cup White vinegar
2 cup Water
1 cup Sugar
1/3 cup Fat from bacon
2 tbsp All-purpose flour
1/2 tsp Salt
1/4 tsp Pepper
2 tsp Salt, added to hot
Potatoe


1. While potatoes are cooking, chop celery and set aside. 2. Chopp
onions and set aside 3. Fry bacon , chop in to small pieces and setr
aside 4. Remove bacon from fat, add onions to fat and saute' 5.
Remove onion from fat and remove fat from pan. 6. Re-add 1/3 c fat to
pan. 7. Add flour and brown slightly 8. Add vinegar, water , salt
,sugar and pepper 9. Cook until clear.

Peel potatoes and cut into slices while still hot. Add the 2 tsp salt
to hot peeled potatoes. Add onion, celery,bacon and sauce to potatoes.

Let stand for several hours to let flavors blend.

Decorate with bacon or parsley or whatever.
