Sort Of German Potato Salad
8 medium boiling potatoes, (8 to 9)
1 green pepper, chopped
1 medium onion, chopped
3 hard-boiled eggs, chopped (3 to 4)
(reserve one to slice as garnish)
6 slices bacon
3 tbsp bacon fat
3 tbsp vinegar
2 tbsp sugar
salt and pepper, to taste
1/2 cup salad dressing or light salad dressing


Peel, quarter and cook potatoes in boiling salted water. Meanwhile, in se
rving bowl place chopped green pepper, onion and chopped eggs. Fry bacon
until crisp. Drain on paper towel. Crumble. To 3 T. of bacon fat in pan,
add vinegar, sugar, salt and pepper. Boil just before serving. To bowl, a
dd sliced potatoes. Pour on cooked dressing. Add about 1/2 cup salad dres
sing or mayonnaise to make creamy. Top with bacon and egg slices. Serve w
arm.
