Moroccan Nights Couscous Recipe

Moroccan Nights Couscous 1 tbsp olive oil
1 medium onion, chopped
1/2 green pepper, chunked
2 medium tomatoes, chopped
1 small zucchini, cubed
1 1/2 cup cooked beans
1 carrot, sliced
1/2 cup green peas
1/2 tsp hot pepper sauce
1/2 tsp salt
6 mushrooms
1/4 cup raisins
3 cup couscous, cooked
Heat oil in a 1 quart saucepan and saute onion 3 to 5 min. Add tomatoes,
green
pepper, carrot, zucchini, peas, maybe some fennel, beans, salt. Cover and
cook
over low heat for about 15 min. Add remaining ingredients and continue
cooking
for another 5 to 10, until tender. Prepare the couscous according to
package
directions: I just used "Near East" brand -- a 10 oz. box provides about
two
dry cups. One dry cup, cooked, provides a small mountain of the stuff!
Place
it all on a platter, gently stir in some butter or more oil, and splop the
sauce all over it. Garnish to make it pretty with anything that, well,
looks
pretty.
