Go-Lite: Not-So-Guilty Fettuccine
1 lb Fettuccine
1 tsp Olive oil
1 Garlic clove, minced
3/4 cup Light sour cream
1/2 cup 1% cottage cheese
1/4 tsp Salt
1/4 tsp Pepper
1 Egg
3/4 cup 2% milk
1 cup Ham, chopped
1/2 cup Parmesan, freshly grated
1 tbsp Fresh parsley, chopped


In a large pot of boiling salted water, cook fettuccine for about 8
minutes of until tender but firm.

Meanwhile, in skillet, heat oil over mdium heat; cook garlic for 30
seconds. Stir in sour cream, cottage cheese, salt and pepper. Heat
through.

Whisk together egg and milk; whisk into skillet. Stir in ham and
Parmesan. Bring almost to boil; reduce heat to medium-low and simmer
gently for 5-7 minutes or until thickened.

Toss with pasta. Sprinkle with parsley. Serve immediately. Per
serving: about 660 calories, 37 g Protein, 14 g fat, 94 g carbohydrate
