Warm Vietnamese-Style Noodles Recipe

Warm Vietnamese-Style Noodles
8 oz chinese wide lo mein noodles, uncooked
2 package dried shiitake mushrooms 0.5 ounces
3 tbsp seasoned rice vinegar
1 tbsp brown sugar
1 tbsp dark sesame oil
1 tsp dried cilantro
1/2 tsp crushed red pepper
14 oz bean sprouts, drained
2 tbsp chopped unsalted dry-roasted peanut


1. Bring 2 quarts water to a boil in a Dutch oven. Add noodles and
mushrooms; cook 5 minutes. Drain well. 2. Combine vinegar and next 5
ingredients in a large bowl, and stir well. Add noodles, mushrooms, and
bean sprouts; toss well. Sprinkle with peanuts.

Yield: 4 servings (serving size: 1 cup).

Note: Substitute 8 ounces uncooked fettuccine for Chinese wide lo mein
noodles, if desired.

If one can inject the recommended amount wholesome fruit & veg into your meal plan, you'll soon see that you feel full and have a substantially lower likelihood of falling prey to those unwholesome mid-morning potato chips.
