Tortellini And Roasted Red Pepper Sauce
1 tsp olive oil
3/4 cup chopped onion
2 garlic cloves, crushed
1/2 cup canned vegetable broth
2 tsp sugar
2 tsp red wine vinegar
1 1/2 tsp dried basil
12 oz roasted red bell peppers, drained
9 oz fresh cheese tortellini, uncooked
1/4 cup shredded fresh parmesan cheese
2 tbsp chopped fresh parsey


1. Heat oil in a medium nonstick skillet over medium-high heat. Add onion
and garlic: saute 3 minutes or until tender Place onion mixture, broth,
sugar, vinegar, basil, and bell peppers in a food processor or blender;
process until smooth. Return sauce to skillet; cook over medium-high heat
5 minutes or until thoroughly heated. 2. Cook tortelllni according to
package directions, omitting salt and fat. Drain well. Combine tortellini
and sauce; toss gently to coat. Sprinkle with cheese and parsley Yield: 3
(1-cup) servings. Exchanges: 1 FR/V, 2 P/M, 30 C. Per serving: CAL 377
