Tortellini Antipasto Salad Recipe

Tortellini Antipasto Salad

DRESSING

6 tbsp olive oil
1/4 cup red wine vinegar
2 oz italian salami, minced
1 tbsp basil, finely chopped
1 tbsp parsley, finely chopped
1 tbsp parmesan cheese, grated
1 tsp minced garlic
1/2 tsp salt
1 pinch red pepper flakes

SALAD

4 cups spinach leaves
1 package cheese filled tortellini
4 oz provolone cheese, cubed
jars *****, (6 oz. each) marinated artichoke heats, drained
3 plum tomatoes, cubed
1/2 cup chopped imported ripe olives


Dressing: In jar with tight fitting lid, combine all ingredients; cover
and shake vigorously.

Line a large salad bowl with spinach leaves. In large bowl toss
remaining ingredients with dressing. Spoon into salad bowl. Makes 4 to 6

servings. 635 calories (4 servings), 425 (6 servings).
