No-Fat Cinnamon Coffee Cake Recipe

No-Fat Cinnamon Coffee Cake
1 cup plain nonfat yogurt
1 tsp baking soda
1/4 cup applesauce
1 cup brown sugar
2 egg whites
1 tsp vanilla
1 1/2 cup all-purpose flour
2 tsp baking powder
Topping
1/2 cup brown sugar
1 tbsp cinnamon


Lightly coat a 9-inch baking pan with cooking spray.
In small bowl, combine yogurt and baking soda: mix well and set aside.
(mixture will grow in volume)

In large mixing bowl, beat applesauce with sugar until well mixed.
Add egg whites and vanilla: beat well, about 2 min. Combine flour
with baking powder: add to applesauce mixture alternately with yogurt
mixture.

Topping: Combine sugar and cinnamon. Mix well.
Spread half the batter in pan. Sprinkle with half the topping. Cover
with remaining batter and sprinkle with remaining topping. Bake in
350F oven for 45 min or until toothpick inserted in center comes out
clean. Let cool for 10 to 15 minutes in pan, then invert onto wire
rack.
