Upside Down Gingerbread Cake (5 Pts) Recipe

Upside Down Gingerbread Cake (5 Pts)
1 can pear halves in fruit juice, (16 oz)
2 tbsp brown sugar
1 tbsp lemon juice
1 package gingerbread cake mix, (14.5 oz)
1 1/4 cup water
1/4 cup frozen egg substitute, thawed


Preheat oven to 350°. Drain pears, leaving 1 tablespoon liquid. In
9-inch
baking pan, combine first 3 ingredients, including the reserved pear
liquid.
Combine gingerbread mix with water and egg substitute. Spoon batter over
pears. Bake 30 to 40 minutes, or until a toothpick inserted near center
comes out clean. When baked, invert cake onto serving platter and serve
warm.

Per serving: 240 calories, 3 grams protein, 5 grams fat, 47 grams
carbohydrates, .7 milligram cholesterol, 228 milligrams sodium, 1 gram
total
fiber, 18 percent calories from fat.
