Mock Orange Drop Cookies Recipe

Mock Orange Drop Cookies

INGREDIENTS

1 cup cooked, mashed carrots
1 cup sugar
1 cup butter or margarine
1 egg, beaten
2 cup flour
2 tsp baking powder
1 tsp lemon extract

ICING

1/4 cup frozen or fresh orange juice
2 tbsp soft butter
powdered sugar, (enough to stiffen the
icing)


Cream butter and sugar. Add beaten egg and cooked mashed carrots. Sift
flour and baking powder and add to the ingredients. Add lemon extract
last.
Drop by teaspoonfuls onto ungreased cookie sheet. Bake at 375 degrees for
10 to 12 minutes.

These cookies are very moist, almost melt in your mouth and they freeze
well.
Makes 4 dozen.
