Sugarless Health Cookies Recipe

Sugarless Health Cookies 1 cup raisins
1/2 cup dates, chopped
1 cup boiling water
1/4 cup oil
1 egg, well beaten
1 tsp vanilla
1 tsp soda
1 cup flour
1/2 cup oatmeal, (uncooked)
1/4 tsp salt
Boil raisins,dates and water for 3 minutes. Cool to lukewarm. Add oil, egg
and vanilla. Mix. Add dry ingredients (which have been mixed together).
Mix thoroughly. Chill in refrigerator. Drop by teaspoon on greased cookie
sheet.
Bake at 350 degrees for 10-12 minutes.
Artificial sweetener may be added to make cookies sweeter, but they are
good
and more healthful with only the fruit as sweetener.
Yield: 3-4 dozen.
I ran across this recipe for cookies the other day, Debi, and decided to
share it with you. Hope it's a good one! It came out of the Golden
Anniversary Cookbook (50 years of recipes from our state's (OK) HomeEc
Extension office). I just bought the book, but so far it looks like it has
some recipes that will adapt well to OAMC.
