White Bean Bruschetta (1 Pt)
1 1 x 8 inch (20 cm) baguette, cut into
1-inch-thick (2.5 cm) slices
1 1 x 15.5 oz (440g) can cannellini beans, drained a
2 cloves garlic, minced
1/2 tsp lemon juice
2 tbsp water
Paprika to taste
Salt and pepper to taste
1 large tomato, coarsely chopped
Basil leaves for garnish


1. Preheat oven to 400°F (200°C).

2. Toast bread in oven for 8 to 10 minutes or until lightly browned.

3. Purée beans with garlic, lemon juice and water until smooth. Adjust
seasonings to taste.

4. Spread purée on toast. Top each with a few pieces of tomato, and garnish
with basil leaves.
