Shurit Ads (Egyptian Lentil And Garlic Soup)
7 cup chicken stock
2 cup lentils
2 tomatoes, peeled, quartered
(canned o.k..)
4 garlic cloves
2 onions, quartered
2 tbsp butter
1 pinch pepper
2 tsp Ground cumin
lemon wedges, to serve
chopped scallions, to serve


Put the first 5 in a pot and
-cook for
about 45 minutes or until
lentils are tender. Puree in
-blender.
Butter to cumin: Add these
-to the pureed
soup and reheat; (or
-freeze—it does freeze
well.) Adjust seasonings.

(The original recipe called for frying some more onions to put on the top
of the soup before serving. I think that is more authentic, but we like
the scallions better in our family.)
This is one of my children's favorite soups. We discovered it when we
were looking for a dish to prepare for a home school International Meal.
It looks kind of like mud, but after serving it to MANY children over the
years I have yet to find one who didn't eat the whole bowl after they had
been coaxed to take at least one bite. I usually make a huge batch and
freeze it. Good to eat with the Custardy Cornbread recipe sent earlier.
Another way to use this soup is to spread some thickened soup (you know
how it gets after sitting on the stove awhile on "warm") on bread under a
layer of grated cheese before putting the whole thing under the broiler
for a new twist on toasted cheese sandwiches.
