Yentl Lentil Salad
2 cup Cooked lentils
1 1/2 cup Peeled, seeded, chopped
Tomatoes
1 cup Chopped parsley
1/2 cup Diced celery
1/2 cup Chopped green pepper
1/2 cup Chopped red onion
1/4 cup Chopped mint
1/4 cup Lemon juice
1 tbsp Olive oil
1 tsp Salt
1/4 tsp Pepper
1/8 tsp Each garlic powder & cumin
Lettuce leaves
Mint leaves (optional)


1. In large mixing bowl, combine all ingredients, except lettuce and
mint leaves, mixing thoroughly. Chill.

2. Serve on a bed of lettuce.

3. Garnish with mint leaves if desired.
