South Of The Border Vegetarian Bake (Pinto Bean Mix) Recipe

South Of The Border Vegetarian Bake (Pinto Bean Mix)
4 cup cooked rice
3 cup Pinto Bean Mix, (see recipe)
1 cup salsa
2 cup Monterey jack cheese
1/2 cup chopped onion
1 green bell pepper, diced
1 large diced tomato
Sour cream, for garnish
Guacamole, for garnish


Preheat oven to 350 F. In a 2-qt casserole dish, layer cooked rice and
Pinto
Bean Mix. Spread salsa over the top and sprinkle with cheese. Bake in
preheated oven 20 to 30 minutes or until heated through and cheese is
melted.
Sprinkle onion, green pepper and tomato on top. Garnish with sour cream
and
guacamole just before serving. Makes 6 to 8 servings.
