Red Beans And Rice (Red Beans And Rice Mix) 1 package Red Beans and Rice Mix, (see recipe)
1 medium onion, minced
2 1/2 cup water
1/2 lb ham hocks
3 ribs celery, chopped
4 1/4 cup water
Soak the beans overnight in water to cover. Drain the beans and place in a
4-qt saucepan. Add the onion, water, spice mix, ham hock, and celery.
Bring
the mixture to a boil, reduce the heat, and simmer gently about 2 hours,
or
until the beans are tender. Remove the ham hock, and chop the meat. Return
the
meat to the beans, and discard the bone. Remove the bay leaf from the
beans.
Keep the beans warm. In a 3-qt saucepan, heat the 4 1/2 cups of water to
boiling. Add the rice mix, and simmer gently for 25 minutes, or until the
water is absorbed. Stir the rice into the beans. Serve with Louisiana hot
sauce. Serves 6.
