Foccacia Bread Recipe

Foccacia Bread
2 tbsp yeast
1 tbsp sugar
1/2 cup warm water
2 cup warm water
1/3 cup olive oil
6 1/2 cup all-purpose unbleached flour
4 tsp salt -toppings
olive oil
coarse salt
Parmesan cheese, fresh, grated
fresh rosemary leaves


Stir sugar into 1/2 cup warm water. Sprinkle yeast on top. Set aside 5
minutes to proof. Stir in 2 cups flour and olive oil. Mix flour and
salt. Use the dough hook on an electric mixer and add half the flour
mixture. Mix to blend. Add the rest of the flour/salt mixture and
knead until smooth and elastic and slightly sticky. Add a teaspoon of
water at a time if it is too dry, or a bit more flour if too sticky.

Coat a large bowl lightly with oil, put in the ball of dough and turn
over so it is coated with oil. Cover with a light cloth or saran wrap
and let rise in a warm place 45 minutes to 1 hour.

Form into focaccias. You will get 2 large focaccias (reaching the edges
of a lg jelly roll pan) or 6 medium (good if using for pizza. 2 of
these fit nicely into a gallon zip-lock bag and make generous individual
pizzas). Top with olive oil, rosemary, and salt for traditional
focaccia, add Parmesan if desired, or leave plain with only olive oil if
using for pizza. Let rise 45 minutes to 1 hour covered.

Bake 20 minutes at 400 degrees. If freezing, bake 10-15 minutes, just
until the crust is set but not brown. Wrap or bag and freeze. To
serve, put in 400 degree oven 10-15 minutes until golden brown. To
serve as pizza, thaw, add toppings, and bake until toppings are hot and
cheese is melted.
