Surprise Muffins 1 1/2 cup Unsweetened applesauce
1 Egg, slightly beaten
2 tbsp Oil
1/4 cup Honey
1 cup Whole wheat flour
1 tsp Baking powder
1 tsp Baking soda
1/2 tsp Cinnamon
1/4 tsp Nutmeg
3/4 cup Of one of the following:
Raisins
Diced apple
Grated carrots
Grated zucchini
Blueberries
Mix first four ingredients in a large bowl. Sift in remaining
ingredients. Stir until barely mixed. Add fruit. Spoon into lightly
greased muffin tins. Bake 20 minutes at 375'F. |
