Swedish Rye Recipe

Swedish Rye
2 cup Rye flour
1/2 cup Dark molasses
1/4 cup Honey
2 tsp Salt
2 cup Boiling water
2 package Dry yeast
1/2 cup Warm water
5 1/2 cup White flour


Combine first 5 ingredients. Gradually add boiling water, beat 2
minutes. Dissolve yeast in warm water.
Add yeast and 2 cups white flour to mixture. Beat at high speed 2
minutes. GrAdually add enough flour (about 2 1/2 to 3 cups) to make
soft dough. Knead 8 to 10 minutes. Place in a greased bowl. Let rise
75 to 90 minutes. Punch down and divide in half. Form 2 round loaves.
Let rise 45 to 60 minutes. Bake at 350~ for 35 to 40 minutes.
