Rich Irish Soda Bread Recipe

Rich Irish Soda Bread
MIX TOGETHER:
2 tbsp granulated sugar
2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
2 1/4 cup white flour
1/4 cup butter
1 tbsp caraway seeds
1 cup raisins, currants or dried cranberr

BLEND TOGETHER:
1 egg
2/3 cup plus 2 tablespoons buttermilk


Heat oven to 375ºF. Mix together the egg and buttermilk.

In a separate bowl, mix together dry ingredients. Cut butter into dry
ingredients using a fork or pastry cutter until mixture is like wet sand.

Stir in raisins and caraway seeds, then add egg and buttermilk mixture.

Knead just a little to make sure dough is well-mixed and pat dough into a
greased round cake pan or round loaf pan. Slice an X across the top and
brush with milk. Bake for 40 minutes.
