Banana Bread - Sugar Free
3/4 cup ripe bananas, mashed
1/3 cup vegetable oil
2 Extralarge eggs
1/2 cup water
2 cups all purpose flour
1/2 tsp cinnamon
1/2 tsp nutmeg
1 cup chopped nuts, optional
1 tsp baking soda
2 1/4 tsp baking powder


1. Preheat oven to 325 degrees. Coat a loaf pan with vegetable oil or
shortening (I use bakers secret spray)
2. In a large bowl whip together oil, eggs, and water until very light
and smooth.
3. Add flour cinnamon, nutmeg and nuts if desired and mix well.
4. Stir in baking soda and poweder quickly and then mix about 30 times
until smooth.
5. Bake for 50-55 minutes or until a knife come out clean
